Hello Again :)

Wow, the last time we published on this blog was last July! Well, here I am. I haven't met with the trainer yet, and I haven't done any exercise. But I'm trying to eat better. I've been struggling the most with healthy snacks and quick lunches. I think I'm going to have to stock up on spring mix lettuce and blue cheese, or I might cave and make some mac 'n' cheese! I just ate a 1/2 cup of ricotta cheese with a 1/4 tsp. of almond flavoring and 1 equal packet (I imagine using sugar would be fine, but the recipe came out of the South Beach Diet cook book...it's a little anti-sugar.) It doesn't taste bad, but I can't seem to finish the half cup. I guess that's not a bad thing. We've also made two dinners from the same book. We had a roast pork loin with rosemary and garlic that was really yummy, and tonight we had a Mexican Lasagna. It would be gluten free if you can eat corn tortillas (or find something to replace them with. Or I guess you could leave them out...) Anyway, it literally looked like vomit, but it was really yummy.
